Moin-Moin is a great way to provide a traditional, protein-rich dish to your family, friends and guests. Here’s a simple, yet healthy recipe you can follow or customize to your liking.

Here is what you may need
This recipe uses healthy, wholesome ingredients to make 6 cups. You can always adjust certain ingredients to make it to your liking.
3 cups of PEELED Black-eyed peas or Honey beans. This is the main ingredient for Moin-Moin.
1 Red bell pepper - Adds rich nutrients, flavor, and color.
1 Tablespoon hot pepper - Adds spiciness as you prefer.
1 to 2 Large Onions - Brings out robust rich flavor and taste.
½ Cup of crayfish - Grounded crayfish for extra protein and taste.
½ Cup of Vegetable Oil/Canola oil - Use the oil of your choice.
1 Teaspoon of Salt - Moderately for flavor and taste.
1 Tablespoon of Garlic powder - for extra flavor and great taste.
1 to 1 ½ Cup of chicken or vegetable broth for blending.
1 cup of cooked chicken meat (optional).
Optional Protein: Boiled egg, cooked shrimp, corned beef or dried/smoked fish.
Prepare your Moin Moin Beans
For faster preparation, you can buy pre-peeled black eyed beans from many ethnic and African food stores. Alternatively, you can use the method below:
Soak the beans in water for about 5 to 10 minutes. DO NOT over soak to avoid the beans from getting soft and will not split easily.
Use the “Dice, Chop or Pulse” button of your kitchen blender to split up the beans with the water. Push and hold the button in pulses or for up to a minute several times to split the beans and loosen the skin but not to actually blend the beans.
Pour the beans into a kitchen bowl, adding water to more than cover the beans, allowing the bean skins to float easily.
With your palm, massage the beans around till the skin floats. Pull and pour out the skin.
Repeat step #4 as needed until all the skins are removed.
Prepare the Bean Pudding
Combine and blend at high speed the peeled beans, red bell pepper, hot pepper, onions, salt and crayfish, chicken meat, and garlic in a blender. Add some of the broth and blend.
Add more broth as needed until the pudding is smooth but not too runny. Excess broth or water can lead to soft, mushy Moin-Moin instead of the traditionally moist and firm Moin-Moin.
Pour the pudding into a separate bowl and add the oil and optional protein.
Stir until well mixed. You are now ready to add your pudding into the Moin-Moin Pro Kit cups!
